The menu includes a careful selection of starters designed for shared indulgence. Oysters with caviar, a platter of shellfish or Iberian meats and other creations celebrate the seasonality of produce in general and the jewel of this season in particular: black truffle. Examples of that include the artichoke carpaccio with truffle and the pizza boasting this characteristic ingredient. A fondue – the quintessential Swiss delight – comes next and has been reinvented here in three versions: champagne, tomato and truffle, a dish that becomes the centrepiece for the tables at the Winter Terrace.
