A visionary in the world of haute pâtisserie, Nicolas Rouzaud has spent more than two decades refining the art of French pastry, seamlessly blending tradition with modern creativity. Born and raised in France, his passion for baking was sparked by working in the traditional bakeries of Toulouse, where he began honing his skills and embarked on a series of apprenticeships. Later, his journey to perfect his craft led him to Les Compagnons du Devoir, where he earned his CAP diplomas in Pastry, Chocolate, Confectionary, Ice Cream, and Bakery.

His career took him from intimate pâtisserie kitchens to larger-scale production in Brussels, with his time at Michel Kayser’s two Michelin-starred Alexander in southern France marking a pivotal moment.
